Recipe: Simple Ground Beef Enchiladas

Ingredients

  • 1 pound ground beef

  • 1 16-oz jar Picante Sauce
  • 2 cups shredded Cheddar cheese (about 8 ounces)
  • 12 6-inch corn or flour tortillas, warmed

Instructions

  1. Heat the oven to 350°F.
  2. Cook the beef in a 10-inch skillet over medium high heat until it’s well browned, stirring often to separate meat.
  3. Pour off any fat.
  4. Stir in 1/2 cup picante sauce and 1 cup cheese.
  5. Spread 1/2 cup picante sauce in a 3-quart shallow baking dish.
  6. Spoon about 2 tablespoons beef mixture down the center of each tortilla.
  7. Roll up and place seam-side down in the baking dish.
  8. Top with the remaining picante sauce and cheese.
  9. Bake for 20 minutes or until the enchiladas are hot and the cheese melts.
