- In blender or mixer, combine tomato soup, eggs, salt and chile powder.
- Prepare cheese and onions and mix together in small bowl.
- In large pan over medium heat, heat the oil.
- Start with 3 tablespoonsful and add as needed.
- It requires about 1 tablespoon per tortilla.
- Dip tortillas quickly into the soup and egg sauce, and fry 1-1/2 minutes on each side — or until egg is cooked.
- Remove tortilla to platter with lettuce on it, sprinkle down the middle with onion-cheese, roll up and resprinkle with same mixture.
- If desired these may be made ahead and kept hot in warm oven for 15 to 20 min., then transferred to their lettuce bed.
